Chef Rahul Rana embraces a playful and experimental approach, crafting bold, tapas-style plates that merge traditional Indian flavors with modern influences. Guests can indulge in a world-class fine dining experience with a curated tapas menu featuring vibrant and flavorful creations, including Tandoori Lamb Chops infused with aged ghee roast spices, Chilli-Embered Charcoal Chicken paired with spiced hummus, and Chicken Tikka Masala with Pickled Onion glazed in rich goodness. The Ghee Roast Chicken Malabar Gold Taco delivers a crisp, spiced delight.
Drawing from his vegetarian roots and the rich culinary heritage of his grandfather, who once cooked for Maharajas, Chef Rahul Rana also brings innovative vegetarian creations to the table. Standout dishes include Cornbread Pakora with wasabi-miso velouté, Artichoke Dumpling in aromatic Thai curry foam, and Mushroom Ghewar topped with pickled shimeji mushrooms, while the Mix Veg Kebab accompanied with Chettinad curry, showcasing his mastery of blending traditional flavours with modern techniques..
The signature cocktails are thoughtfully crafted to complement the menu, offering unique pairings such as Kahwa—a fragrant fusion of whisky and spiced tea—and Royal Journey, a luxurious blend of aged spirits. Amsul Picante delivers a bold botanical burst of citrus, while another variation balances tangy kokum with a spicy kick. To elevate the experience further, guests can pair the Godawan Single Malt Whiskey with the tapas menu for a perfect combination of flavors.
