Lip-smacking recipes by Chef Ranveer Brar to fight the monsoon blues!

Do you smell that fragrance? The greatest way to recognize the start of the monsoon is by the soothing smell of moist earth. This season offers a lot to love. The calming coolness in the air motivates us to cook some hot and tasty meals. This season calls for a platter full of piping hot treats to be shared with your loved ones. While fried food is popular during the monsoon, we have put together a list of healthy alternatives so you may indulge without feeling guilty. 1) HERSHEY’s Homestyle Peanut Curry
Ingredients:
For the paste
• 80 gm peanuts
• 2 tbsp grated coconut
• 2 red dry chilies, cut in two
• 2-3 green chilies
• 2-3 cloves
• ½ inch cinnamon stick
• 2-3 tbsp water
- For the curry
- 1-2 tbsp HERSHEY’s SYRUP Caramel Flavour
- 1 tbsp oil
- 1 tsp cumin seeds
- ½ tsp asafoetida
- 2 dried red chilies
- 1 tsp spiced peanut coconut paste
- 1 tsp red chili powder
- Salt to taste
- 1 cup boiling water
Equipment Needed:
- 1 mixer
- 1 saucepan
- 1 spatula
Method:
- Grind the peanut paste ingredients into a smooth paste
- In a pan heat oil, add cumin seeds, asafoetida and dry red chilies
- Add the peanut paste and cook well
- Add red chili powder, salt, and hot water, followed by HERSHEY’S Caramel Flavoured Syrup.
- Cook for 7-9 minutes
- Serve hot with masala bhaat

2) HERSHEY’s Chicken Peri-Peri Wings
Ingredients:
- 6-8 chicken wings
- 2 tbsp olive oil
- 3-4 tbsp peri-peri seasoning
- 1 tbsp HERSHEY’s Caramel Flavoured SYRUP
- ½ tsp lemon juice
- ¼ tsp chicken seasoning
- Black pepper to taste
- Salt to taste
For peri-peri seasoning
- 1 tsp oregano
- 1 tbsp ginger powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp paprika
- ½ tsp cayenne pepper
- 1 tsp cardamom powder
- ½ tsp salt
Equipment Needed:
- Oven
- 1 mixing bowl
- 2 plates
Method:
- In a bowl, mix the peri-peri seasoning ingredients.
- Method for wings:
- In a bowl, add chicken peri-peri powder, olive oil, lemon juice, HERSHEY’S Caramel Flavoured Syrup, chicken seasoning, salt, and pepper.
- Marinate the chicken wings and keep them aside.
- Preheat the oven to 180 degrees and grill the wings in the oven for 20-25 minutes or till done.
- Garnish with spring onion greens and serve.

3) HERSHEY’s Sweet ‘n’ Spicy Mushroom Fry
Ingredients:
- 2 tbsp HERSHEY’s Caramel Flavoured SYRUP
- 1 tbsp oil
- 3 tbsp garlic
- 1 onion finely chopped
- 10-12 whole mushrooms
- Salt to taste
- ¾ tbsp chili sauce
- 1 tsp cayenne pepper powder
- 2 tbsp vegetable stock
- 1 tbsp corn flour mixed with water
- Sprig onion greens for garnish

Method:
- In a wok, heat oil, add chopped garlic and onion and, cook for 5 minutes
- Add mushrooms, salt, cayenne pepper powder, chili sauce, HERSHEY’S Caramel Flavoured Syrup, stock, and cook for a minute
- Thicken with cornflour mixture and stir well until the sauce has coated the mushroom
- Garnish spring onion greens and serve
