  • St. Louis, Mo. :  Cedar Lake Cellars, a winery and event center, will host a winter dining experience featuring a variety of wines from its new 3 Swans line.  The Cedar-Lake-Cellars'-winter-event will be held Sat., Feb. 27 from 7 to 9 p.m. for those 21 years of age and older.  Cedar Lake Cellars is located at 11008 Schreckengast Rd. in Wright City, Mo.

    The first course includes a crisp arugula salad filled with toasty almonds and crunchy sea salt croutons topped with a balsamic vinaigrette dressing.  The salad is paired with 3 Swans 2012 Chardonnay, Russian River Valley, which is a white wine featuring the flavorful taste of lemon zest and pear.

    The second course features a hearty beer barley and potato soup brimming with the freshest seasonal ingredients possible.  The soup is paired with 3 Swans 2010 Pinot Noir, Sta. Rita Hills, which is a combination of dark cherry, raspberry, limestone with a hint of white pepper.

    The third course is a premium cut veal chop deliciously grilled and topped with rosemary butter served on a bed of celeriac (a special type of robust celery) and velvety Yukon potato puree alongside flash-fried winter greens.  The veal chop is paired with two wines:  3 Swans 2013 Red Field Blend, North Coast, which brings the incomparable tastes of berry, violet and vanilla, and; 3 Swans 2013 Merlot, Napa Valley, which has the tangy goodness of cherry, vanilla, nutmeg and plum.

    The fourth course is homemade cherry pie served in a Cabernet reduction sauce.  The dessert is paired with ICON Port, a sweet red dessert wine that enhances the pie’s fruity flavors.
