SAFFRON FLAVOURED CHHENA JALEBI
Ingredients
- For Jalebi
- Fresh cottage cheese – 200gm
- Refine flour – 50gm
- Sugar – 50gm
- Saffron – 20gm
- Ghee – 200gm
For Rabadi
- Milk Buffalow – 1000ml
- Sugar – 200gm
For Garnish
- Pistachio – 20gms
- Saffron – 5gms
Method
- Make fresh cottage cheese ( Chena ) add refined flour and make a tight paste.
- Add this paste piping bag.
- Make a single-string sugar syrup keep aside add saffron in it.
- Make thick laccha rabdi with buffalo milk and keep aside
- Heat ghee and drip jalebis in round shape. Fry till golden brown
- Dip these jalebis in sugar syrup and remove them from it.
- Garnish with chopped pistachios and saffron and served with rabdi
CHOCOLATE PRALINES
Ingredients
- Heavy Cream – 100gms
- White chocolate – 300gms
- Coconut cream – 50gms
- Desiccated coconut – 30gms
- Gulkand paste – 50gms
- Dry rose petals – 50gms
- Pistachio Paste – 50gms
- Pistachio chopped – 50gms
- Chocolate shells – 30 nos
Method
- Prepare ganache adding cream and chocolate together
- Divide ganache into 3 parts and add coconut cream, gulkand paste, and pistachio paste.
- Fill the filling in chocolate shells and coat with tempered Chocolate.
- Coat these chocolate shells with desiccated coconut, dried rose petals, and chopped pistachios. 5. Rest for approx 20 to 30 min.
