  • Sri Lanka on your plate at Frangipani Trident, Nariman Point, Mumbai

    Mumbai: Frangipani invites you to savour piquant spices and coastal flavours as it showcases the cuisine of Sri Lanka from 19th March to 27th March, 2011 with visiting chefs Kahandawala Mudiyanselage Senarathne Channa Suresh and Nikapitisaluge Piyal Dimuthu Kumara from the Cinnamon Grand, Colombo, at Trident, Nariman Point, Mumbai.

    Sri Lankan cuisine is renowned for its vivid spices and aromatic flavours ingenious to the coastal region. Chef Suresh and Chef Kumara have crafted an exclusive a la carte menu with ‘sambols,’ ‘mallums,’ and more to bring home the delicacies of the coast with authentic spices and traditional style of cooking. Begin with appetizers such as Spicy Cuttle fish salad; Konisso salad or Carrot Sambol and savour curries such as Kos (Bread) Fruit curry; Chicken Moju; Gotukola Mallum; Fish Ambuthial and others, accompanied with tempered or plain rice; or Poll roti . Traditionally all preparations are served with Papadam, Mango chutney, Lime Pickle, fried sprouts and fried dry chilles. Choose from Sago pudding; Kalu Dodol; Talaguli and other desserts to end the journey on a sweet note.

    All through the week, the chefs will present an exclusive a la carte menu for lunch and dinner, with varied delicacies in both, for a distinct culinary experience.

    The Sri Lankan specialties will be available at the Food Theatre for lunch from 12.30 p.m. to 3.30 p.m. and for dinner from 7.30 p.m. to 11.30 p.m., every day, from 19th March to 27th March, 2011.
